Gerber files contain no information about components and so without a schematic or BOM from the original design, cannot be reverse engineered back into a schematic in any EDA tool. It is also not currently possible to reverse engineer a Gerber file back into a PCB in EasyEDA. Your only option is to reverse engineer the Gerbers using Altium and then import the PCB into EasyEDA. If you have a BOM and or a schematic you can then recreate the schematic in EasyEDA. If however you have the schematic and BOM it would be far easier just to create the schematic in EasyEDA and then convert that to a PCB and lay it out in EasyEDA.
