Created schematic and PCB named Sprinkler Schematic and board. I searched my projects but it is no longer there. Do they get deleted after a certain amount of time? Can I get the layout and schematic back?

I searched in the locations you called out and not among the ones that were recoverable. Now that I know they delete older items I now wondering can you download the items and save them on a desktop PC? That is of course if they will work when you upload them and subject them to a newer version of the schematic entry and layout software?
I can't even use past manufacturing as there are no descriptions and pictures showing the past manufactured boards.
If you have not used EasyEDA for some time (you did not answer my question about the last time you saved your file so I have no idea) then you may just be assuming that your files are lost because they no longer appear in the Projects list in the left hand panel.
If that is the case please click on the Project tab on the far left options strip then click on the Open Project folder icon button on the upper right of the left hand panel. Or just do File > Open Project... from the top menu bar.
