I think it's possible by using some gerber editor thing, but how about straight from EasyEDA?
All pads are automatically exposed copper.
If you need to expose specific tracks select them then do:

If you need to expose a specific area then draw an outline using the sold Region (or a specific shape), add a netname to avoid a DRC error, select it then do:

I didn't mean exposing copper. If you look closer at the picture, the colored solder mask / paste mask thing has been removed from under the edge connector.
I don't know if it makes any difference to anything, but my assumption is that this is often done to avoid scratching the paint and making shards of it ending up in the connector.
In this video [https://www.youtube.com/watch?v=omUo3e03TkA](https://www.youtube.com/watch?v=omUo3e03TkA) someone seems to have ordered such PCBs from JLCPCB (though in the video you can see that the mask was left on the bottom side accidentally).
There also seems to be chamfering to ease insertion into card slot.

This exposes anything under the shape copper or bare laminate.
