Can you change the amount of "mouse bites" after you let the software panelize your PCB. I am looking to have less "mouse bites" so the boards come apart easier, with less bending?

Maybe if you change the topic to "PCB Layout" section then you could get some more guidance since this belongs to the EDA tool.
I checked the Panelize settings of EasyEDA and it seems that the tab is automatically created on a group of 8 bites, maybe by creating the panel by yourself you can get a solution.

From our side at JLCPCB we recommend that tabs should be non-plated through-holes between 0.5mm and 0.8mm in
diameter and spaced between 0.2mm to 0.3mm as shown in Figure.

Please consider to make enough bites on your design to ensure that the Panel pieces don't break out during the shipping.
