I can't seem to find a way to create a 2x20 header. Like the kind you would find for an IDE drive.
I see a 2x18 and that's is high as it goes.
What am I missing?

Try doing **SHIFT+F** in a schematic or PCB canvas. Then search for `40 pin` and look under the `User Component` tab.
There are several 2x20 header symbols and footprints in there that may suit or be useful places to start editing your own from.
