Thanks Andy! Do I have to create a separate project for each module? Is it also possible to save sections of an existing schematic and PCB?

You create the modules just by doing Save As on a schematic or PCB so you can do it all in one project. Open a new (temporary) schematic or PCB. Copy and paste the bits of schematic or PCB that you want to be defined as a module into it (or clone the schematic or PCB and delete everything except what you want on the module) then do Save As > Module. The modules then go in to the public(!) Library under Schematic or PCB Modules in the Library. Then you just place them into a new sheet like a component symbol or footprint, where you want them. Once they are saved as modules you can delete the temporary schematics and PCBs.
