Hi, are there any standard hole sizes we must use? If yes what are they? What is the smallest and the largest hole size we can use?

Beside the minimum hole size are there any restriction on hole sizes? Do you have to use any standard hole sizes or can you choose any hole size?

You are free to choose any hole size. You can also make holes of arbitrary shapes using the `Solid Region > NPTH` option. Please see the notes about including schematic symbols for PCB holes in the linked documents in: https://easyeda.com/andyfierman/Welcome_to_EasyEDA-31e1288f882e49e582699b8eb7fe9b1f

I presume that the holes are milled or laser cut rather than drilled?

Most pad and via holes in fibreglass are still drilled. Other larger or irregular holes are routed. Contact Support for more details.
