I would like to place some shorting pads as options in my PCB but not sure how to do this in EasyEDA
I have placed a large rectangle over 2 pads but would prefer to have a depth of solder which can be removed for the other option

Sorry: my bad.
I made the shorting link a while back and forgot that it is just that: a shorting link. It has no gap between the pads so it is no help to you.
You may have to adjust your Design Rules to allow for a small gap between the two pads of something like the solder bridge SOLDERJUMPERNC2. Or just ignore the DRC error a small gap may give.
Note that because JLCPCB do not use wave soldering they may not be able to make a solder bridge that comes out of assembly bridged with solder. You might be able to get a solder bridge formed in PCB Assembly from them if you play about with the paste mask aperture for the pads and possibly remove the solder mask between the two pads but you would have to discuss this directly with JLCPCB Support.
You could use or design a shorting link that has two pins, one either side of the cut:

In both the Shorting or the Cuttable link you have to accept that you cannot give two different net names to a single net that is electrically continuous in the schematic.
