If I have a simple 2 layer schematic where at certain points I want to link layer1 and layer2 can I do that somehow without placing a pad at the intersection of the 2 layers?

I think you mean a 2 layer PCB not a schematic.

Use the `V` Hotkey (just press the `V` key):
