Is the node actually connected to both wires now? If so, I would expect the newly connected wire to move with the node and the rest of the wire that is being moved. That is not the case, and I cannot get it to work like that either. Can someone confirm that these wires are indeed connected? And is this behavior as intended? Thank you.

Yes, that is normal wiring behaviour in EasyEDA. Wire elastic banding is tricky to do in web based tools so you may end up disconnecting wires as your gif illustrates. If there's a red dot where the wires meet then they are joined although if the end of one wire overlaps part of another, the dot may appear where the last wire ends and not at what may appear to be the logical join location. This can be adjusted manually.
