You need to use EasyEDA editor to create some projects before publishing
Panelizing one schematic into two PCBs

The circuit is intended to be spread across two pcbs both 80mm x 80mm. I note the panelize option is only for the whole PCB. So do I do one 160mm x 80mm PCB and then get the PCB manufacturer to add an additional v-groove down the middle or should I split the design into two separate projects?

You can do the PCB as a single board and then draw a line right the way across it in the Board Outline layer to create your V-Cut line. Remember to leave home space either side of the line to allow for the cutter head to sweep through. I can't remember if the clearance is detailed in the main Tutorial or on the JLCPCB Capabilities page
