Due to the way PCBs are created from Gerber files (essentially an optical process where the tracks are defined in terms of apertures), bends and track ends are inherently a segment of a circle. Track ends are therefore always semicircular.
There is no setting in EasyEDA to redefine track ends as anything other than radiused.
I don't think there's an easy workaround to create square ended tracks and lines.
Maybe if you drop a Solid Region set to No Solid over the bits of the round ended track that stick out on the far sides of pads to simply crop them out?
