How do I add a GND via in a GND copper pour to stitch the top/bottom GND pours together? I can add a generic via but don't see where to change its net. The tutorials I found online are using older versions of EasyEDA and it doesn't appear to work anymore.

Nevermind, I found it, place via with V, then before placing, press Tab to change the Via's net.
