I am trying to run simulations for an AC to DC converter and I am confused when to use the "voltage source - set for SINE, or use the waveform generator sine wave function. Do they work the same?
The waveform generator is built from the same voltage sources as the simple independent voltage source, it is just configured to produce comkonlybused waveforms in a more intuitive way.
That said, once understood, the basic independent voltage (and current) sources are more flexible. These are described in detail, with examples, in the Simulation Tutorial, (3) in (2) in:

To clarify:
The waveform generator is built from a pair of simple independent voltage sources. They are just configured to produce commonly used waveforms in a more intuitive way.
