to be clear: I'm a total beginner.
I created a schematic for a 5V voltage regulator.
In there I have 3 nets (Vin, Vout, GND).
How can I assign pads that net so that I can attach wires to it?
Without sight of your project it is difficult to give an accurate, detailed response but in general if you want to connect wires directly to a PCB using through holes, then the simplest way to do it is to find a single pin header with a though hole diameter that is big enough to get your wire through and then place that in your schematic.
Then when you convert the schematic to PCB it will pull in the correct PCB package/footprint.
If you cannot find a suitable PCB package/footprint to assign to the Schematic Symbol that you have chosen for your single pin header, then it is easy to edit an existing one, save it with a unique name and then assign it to your Schematic symbol

If you want, you can also create a unique Schematic Symbol for your purposes simply by cloning and editing an existing one, assigning a suitable PCB package to it and then saving it with a unique name.
